New Dairy Free Lactation Cookie Recipe

I was so blessed to hear from one of the many mothers I have had the privilege to help with breastfeeding a few weeks back. She had mentioned how much she enjoyed my previous lactation cookie recipes and then shared a few new recipes she created as well. Her baby had a dairy sensitivity so, she has come up with a fabulous lactation cookie recipe sure to help increase your milk supply and be a healthy treat for the whole family. So with out further ado...

This is based off of the Quaker Oatmeal Vanishing cookies recipe. It is also dairy free for all those dairy sensitive little ones:

Dairy Free Lactation Cookie Dream Drops

1/2c coconut oil room temperature (should be in it's liquid state)

3/4c firmly packed brown sugar

1/2c granulated sugar

2 eggs room temperature (very important, otherwise it will cool the coconut oil and you will get lumps)

1tsp vanilla extract

1 1/2c all purpose flour

1tsp baking soda

1 tsp ground cinnamon

1/2 tsp salt

3 cups old fashioned or rolled oats

1c dried cranberries

2c hot water or hot cranberry juice, unsweetened

1tbsp brewers yeast

3 tbsp flax meal

Soak cranberries in the hot water or cranberry juice for 1 hr to rehydrate them. Drain and set aside.

Heat oven to 350 degrees. In a large bowl, mix the coconut oil, brown and granulated sugar until creamy (medium speed with a mixer). Add eggs and vanilla, beat well. In another bowl combine flour, baking soda, cinnamon, salt and brewers yeast. Slowly mix into the sugar mixture. Add the flax meal, oats and cranberries, mix well.

Drop dough by rounded tablespoonful onto a parchment paper lined cookie sheet. Bake 8-10 min until golden brown.
